Titled - Assmann's Rubs ... Good on everything!

BlogThis! What's for Dinner Simple. What I am cooking and trying to cook. Could be Dinner, could be random Desserts. I have no need for "fat free" or "lite" ingredients, but no worries it's only pictures and words and they don't have Any calories. All good, all tasty. Enjoy and pass the butter! SUNDAY, MAY 28, 2006 Assmann's Rubs...Good on Everything! Assmann's Rubs Well, as you may or may not know, the kind folks at Assmann's Rubs recently sent me a package of their product to try out. This to me was great, I have never gotten any kind of "sponsor", especially one that I can use while cooking. I love to cook and the apron they included made me grin from ear to ear. See me below in all my glory with the Assmann's merchandise. The Product: The Product: The fine folks at Assmann's make three distinct rubs (with Sauces on the way The Product: ): · Barbeque Hinee Rub: A delicious mixture of Brown sugar and Spices · Chicken Fanny Rub: A Zesty mixture of Salts, Spices, and a Dash of Cayenne · Beef Rump Rub: A Flavorful concoction of Sweet and Salty All of which comes with its own Rub mascot on the label.   Barbeque Hinee Rub The spice and sugar combination of the Hinee Rub is excellent. I bought some pork steaks and rubbed them thouroughly with the Hinee Rub (letting them sit for about an hour). Then I grilled them on a good hot grill and served them up to my guests. (unfortunately no post grilling pictures) Some of the comments that evening: "These are really good!" "What did you put on these, it's great!" I cannot wait to try the Hinee Rub out on some slow cooked/smoked Pork Ribs. I think the slow cooking would enhance the Rub's effects even more!! Hinee Rub Score: 5 out of 5 Chicken Fanny Rub The Fanny Rub for Chicken is Very tastey! I particularly enjoyed this Rub, it has the zip of lemon peel and some pepper. The Fanny Rub is a Sugar-less Rub and is quite different from the Hinee Rub, but delicious all the same. For this Rub I pulled out my trusty Cast-Iron skillet, rubbed the Fanny Rub, liberally, over some chicken thighs, and put them in a 350-400 degree oven. They baked up very very nicely, the Fanny Rub penetrated through the chicken while cooking and just made it mouth watering!! (even typing this I am thinking back to cooking them and am salivating) These baked, rubbed morsels had a special purpose. I packed them in a picnic lunch in the Smoky Mountains with my girlfriend. She ate all her chicken and then some!! Some of the comments from the picnic: "This is some damn good chicken honey!" "Is there more chicken?" Chicken Fanny Rub Score: 5 out of 5 I can even see splashing this Rub on popcorn, shrimp, or potatoes...is yummy! Beef Rump Rub This Rub is the only one I did not get a chance to cook with, YET!. I have tasted it though and it is a kind of blend of both the Fanny and Hinee Rubs. The Rump Rub has a Salty, Sweet flavor that would got great on Steaks, Hamburgers, Ribs, Popcorn, just about anything. My Plan for this Rub is to grill up some Hamburgers with the Rump Rub in the meat, I have some Ground Chuck set aside just for this ( as advised on the Men in Aprons Podcast). Conclusions The Assmann's Rubs provide a balance of flavor and savory-ness that can be applied to almost anything. Whether you want a sweet Rub, a salty Rub, or a combination; the Assmann's can give it to you. At a reasonable price too, each 3.4 ounce Rub in only $4.50 or you can purchase all three for only $12.00....you can't beat that!! So check them out and be on the look out for their new Barbeque Sauces. I cannot wait to try those.....Until next time.. Eat. Be Happy. Repeat!

Couple takes a shot at BBQ rub business
Two hope to cash in on odd last name

Steve and Kristi Assmann of Franklin have transformed a spice rub they used to make gifts into a product now mass-produced for your table.

And this weekend, the two are hoping to sell their meat and poultry rubs to the more than 20,000 people expected for the Jack Daniel’s World Championship Invitational Barbecue Contest in Lynchburg, Tenn. "We’re not cooking but we will be a vendor," said Steve, who has been a Franklin police officer for 16 years. Kristi, who works at Rivendell in Bowling Green, said she considers the invitation to be a vendor a prestigious one that might open marketing doors. Steve said the business got started after they were newly married about a year ago. Watching the Food Network prompted his interest in barbecue cookoffs, and friends and family encouraged them to market the product. While it was fairly easy to convince Steve he needed to make the products for sale, coming up with a name was another matter, according to Kristi. Kristi said Steve first wanted 911 in the name and a police cruiser on the label. But after about six months of debate, Kristi said their last name that had been the subject of much family snickering was perfect for the product. They have adopted a pig’s butt as their mascot and have the rears of a chicken, a pig and a cow on T-shirts. The rubs are Assmann’s Fanny Rub for chicken, Assmann’s Hinee Rub for pork and Assmann’s Rump Rub for beef. Their name is German and actually pronounced oss-man, but Steve said it’s funnier using the vernacular pronunciation for butt-man. Steve credits Kristi with marketing their products, which are made by Bloemer Food Sales in Louisville, and on shelves at Kentucky Finest Sausage and Piggly Wiggly in Franklin, Chaney’s Dairy Barn, Lost River Cave, I-65 Liquors, All Seasons Gas Grill and Fireside Shop in Bowling Green, the Adams Tenn. Antique Mall, and on tables at Roy’s Barbecue in Russellville and Federal Grove Bed and Breakfast in Auburn. Additionally, their products can be purchased at events such as the cookoff this weekend and from their Web site, assmanns.com. They also have several heat levels of barbecue sauce using the "Hinee" theme, ranging from BBQ Keister Sauce for milder palates, to the blazing hot Set Your Assmann on Fire BBQ Sauce. While the Assmann’s aren’t cooking at the Lynchburg competition, they have received accolades for doing so at other events, including a cookoff in August at Opryland Hotel, where a shrimp recipe took ninth place and Kristi’s booth decorations won a blue ribbon. Kristi said she loves using the rub on grilled shrimp and her son uses it on popcorn. Steve said it’s also good on vegetables. It was likely the couple’s fun spirit that got them selected to be a vendor this weekend. In addition to selling their rubs and T-shirts, they will offer kids' games, including toss the ring on the pig's butt and search for prizes in the pig pen. Tana Shupe, manager of guest services and events at Jack Daniel Distillery, said the Assmann's and their products fit into the spirit of the whole contest.

She also appreciates the parody of the couple's last name.

Western Kentucky University
Small Business Development Center
Client of the month, October 2005

"It is hardly high tech, in fact, it’s almost entirely Redneck. But, small business’ number one concern as with any and all businesses large or small is primarily concerned with the bottom line and Steve and Kristi Assmann have just about every bottom covered with rub." Rick Horn, Director - WKU Small Business Development Center The Western Kentucky University Small Business Development Center is extremely proud to announce the October client of the month is Steve and Kristi Assmann’s BBQ hinee rub and BBQ sauce business. Rick Horn, Director WKUSBDC, has assisted the Assmann’s with startup, manufacturing, and various marketing strategies since the early days of the business inception. It is unusual to have a client opened for such a short amount of time named client of the month but their marketing strategy has the product jumping off the shelf and the quality and consistency keeps first time buyers coming back for more. Steve created the rub and sauce mixtures through trial and error and Kristi has taken on the majority of the marketing plan. They spent the fIrst 6 months debating Steve’s desired name for the company "911 Emergency spice rub" but Kristi’ s intuition and skills finally won out.

Steve is a 15 year veteran of the Franklin, Kentucky police force and a 101ST airborne veteran. He enjoys working closely with the youth in the DARE program. Kristi works at Rivendell and they both enjoy attending and competing in the weekend BBQ festivals in the area. They have won numerous awards already and are looking forward to the 21 & 22 October BBQ festival at the Jack Daniels distillery where 20,000 visitors are expected. More information on Assmann’s Hinee rub, Rump rub, Fanny rub, or any of their other fine products is available on their website.
